- Japanese or globe eggplant, sliced lengthwise
- Olive oil
- Lemon juice
- Salt & pepper

Slice eggplant lengthwise. Brush slices with olive oil and squeeze some lemon juice over the eggplant. Sprinkle with salt and pepper.
Grill on barbecue until done.
